TASTING: Beautiful color with a pale yellow reflection. Complex nose combining an elegant sappy character and notes of very ripe Sauvignon. The palate is ample dominated by the exotic character of Sauvignon (mango-citrus) and the fatness of Sémillon.
WITH WHAT ? : Serve at 8-10 °C within three years maximum as an aperitif, with seafood, fish, oysters or as an aperitif.
TECHNIQUE: The grapes are pressed directly after harvesting overnight to preserve the aromas. Fermentation temperature at 14°C. Long fermentation and aging on fine lees.
GRAPES: 70% Sauvignon Blanc and Gris, 5% Muscadelle, 25% Sémillon.
